Add 1/2 a red onion to jug and chop speed 7 for 7 seconds.
Scrape down bowl, add 1 clove of garlic chop speed 7 for 7 seconds.
Add roughly chopped head of kale to bowl. Chop speed 6 for 10 seconds.
Scrape down bowl, chop one more time if needed.
Set aside in salad bowl. Add 1 liter of water and 1 tbsp veggie stock concentrate to jug, add 200 grams quinoa to basket, add cubed butternut squash to varoma, steam varoma temp speed 3 for 20 mins.
Cool if desired and add to kale in salad bowl, add a can of rinsed chickpeas, toss
Add goat cheese or danish feta to taste and pour 1/2 a squeezed lemon over salad.
Season with sea salt and fresh cracked pepper.
